It’s a bold statement to say that these are the most delicious breakfast biscuits, but we mean it. These savory biscuits contain crumbled Hempler’s breakfast sausage, cheddar cheese, and parsley. These fluffy, buttery breakfast biscuits are irresistible, with so much flavor in every bite.

These homemade biscuits are perfect for special occasions. Enjoy fresh out of the oven as a snack, or serve alongside freshly cooked eggs for a brunch spread.

A quick tip, the key to a fantastic biscuit is very cold butter and minimal handling. We recommend grating and then freezing the butter for tender, flaky biscuits.

1 lb. Hempler’s Ground Breakfast Sausage
4 cups all-purpose flour
1 ¼ tablespoons baking powder
1 teaspoon baking soda
1½ teaspoon sugar
1½ teaspoon kosher salt
¼ cup fresh parsley, chives, or green onion, finely chopped
¼ teaspoon chili flakes
1 cup cold unsalted butter, cut into pieces and chilled
1 cup cheddar cheese, grated
1¾ cup cold buttermilk, plus more for brushing

Heat the oven to 450°F. Line a baking sheet with parchment.

In a large skillet, brown the sausage over medium heat, breaking it into small pieces with a wooden spoon, cooking over medium heat until it is fully cooked and no longer pink, 6-8 minutes. Transfer sausage with a slotted spoon to a plate and set aside to cool.

Make the biscuits. Whisk together flour, baking powder, baking soda, sugar, salt, parsley, and red-pepper flakes in a large bowl. Cut in butter until mixture resembles coarse meal with a few pea-size pieces remaining. Stir in cooked sausage and cheese.

Add buttermilk and stir to create a thick, sticky batter (do not overmix). Working on a lightly floured surface, knead the dough only a few times until it comes together. Using a rolling pin, roll the dough into a 1-inch thick rectangle. Using a sharp knife, cut out 12 squares. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes.

Remove biscuits from the freezer. Brush with buttermilk, place into the oven, and bake for 15-18 minutes or until golden brown.
