1 package Hempler’s Smoked Sausage, sliced
16 ounces sharp cheddar cheese, grated
1 pound dry pasta
4 cups milk
6 tablespoons butter, unsalted
6 tablespoons all-purpose flour
1 teaspoon salt

Lightly brown the sausage in a large skillet over medium heat. Remove from the pan and set aside.

Cook the pasta according to the package instructions and drain. Set aside.

Heat the milk in a small saucepan over medium-low heat until just warm. Set aside.

In a large Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually add the warm milk, whisking continuously until all of the milk has been added. Cook, stirring frequently to prevent scorching, until thick - about 5 minutes. 

Reduce the heat to low and gradually add the shredded cheese and salt, stirring continuously until melted. 

Add the pasta and sausage to the pot and mix well—season with additional salt and pepper to taste.
