These Asian-Inspired Ginger Pork lettuce wraps make for a great, healthy, quick-to-prepare, satisfying meal that is guaranteed to be a favorite. The best part? It takes less than 30 minutes to prepare. Browned and crisped pork is paired with fresh ginger, herbs and spicy flavors. Serve this dish in crunchy bibb-lettuce wraps for a great lunch or dinner. 

Ingredients

1 Tablespoon olive oil
1 pound Hempler’s Ground Pork
½ teaspoon salt
½ teaspoon pepper
⅓ cup chicken stock
2” fresh ginger, peeled & minced
1 8-ounce can whole water chestnuts, drained and diced
½ cup cilantro, minced
¼ cup Thai basil, minced
¼ cup mint, minced
1 Serrano pepper or 2 Thai chilis, thinly sliced
1 shallot, diced
2 Tablespoons lime juice
2 Tablespoons fish sauce
1 (8-oz.) can water chestnuts, drained and diced

To serve:
2 heads bibb or butter lettuce
1 cucumber, sliced
1 bunch green onions, thinly sliced
2 Tablespoons sesame seeds
1 lime, cut into wedges

Instructions

  1. Heat oil over medium-high heat in a skillet and add pork—season with salt and pepper. Cook until brown and crispy, about 8-10 minutes. Turn the heat down to medium. Add the chicken stock, ginger, and water chestnuts. Allow to simmer for a few minutes until the stock reduces and the meat has become fragrant. Set aside to cool slightly.
  2. Add cilantro, basil, mint, peppers, and shallot to the pan. Mix well. Add the fish sauce and lime juice to the pan and taste for seasoning. Adjust as necessary. Of special note, the peppers are spicy— adjust quantity based on spice level preference.
  3. Serve with lettuce leaves, sliced cucumber, and cilantro.
