Swapping out the traditional tortilla chips for crispy tater tots takes your everyday nachos to the next level! Topped with our spicy Chorizo and your favorite nacho toppings, these Totchos are the perfect gameday snack or party appetizer.
- 1 (28 oz.) bag frozen tater tots
- 1 pound Hempler’s Chorizo
- 1 Tb. Olive oil
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
- ½ cup sour cream
- 2 Tb. Fresh lime juice
- ¼ cup diced red onions
- ¼ cup diced green onions
- ¼ cup sliced black olives
- Pico de gallo, or your favorite salsa
- Chopped cilantro, for garnish
Bake the tater tots per the package directions, arranged in a single layer on a foil-lined baking sheet. Remove from oven and keep the oven on.
While the tater tots bake, heat the olive oil in a skillet over medium heat. Cook the Chorizo, breaking it up with a spatula, until it is browned and cooked through.
Mix together the sour cream and lime juice and set aside.
Sprinkle the Chorizo on top of the tater tots then top with the cheddar and Monterey jack cheeses. Place back into the oven and bake until the cheese has melted, about 3 to 5 minutes.
Remove the totchos from the oven and top them with the onions, olives, pico de gallo and guacamole. Drizzle with the sour cream mixture. Garnish with cilantro and serve immediately.
