Bacon…in a salsa? You bet! The combination of fresh, sweet corn with smoky bacon and spicy chiles really works!  Served with your favorite tortilla chips, this dip will be the hit of your next party.

Bacon and Sweet Corn Salsa #salsarecipe

Ingredients

8 slices Hempler's Bacon

4 ears fresh corn

6 green onions, sliced

1 can diced green chiles

1 red bell pepper, seeded and diced

1 bunch fresh cilantro

2 limes, juiced

Salt & fresh ground pepper

Instructions

Cook the bacon slices in a skillet until very crisp. Dice the bacon and set aside.

Bring a large pot of water to a boil. Remove the husks of the corn and place into boiling water and cover. Cook for 4 minutes, until corn is slightly cooked but still crisp. Remove from water and rinse with cold water to stop the cooking.

Remove the corn kernels from the cob with a sharp knife, and place into a medium size bowl. Add the green onions, green chiles and red bell pepper.

Remove the cilantro stems and chop the leaves finely. Add to the bowl, along with the lime juice. Season with salt and pepper and toss to combine.

Add the bacon to the bowl, and toss to combine. Serve immediately.  (If making ahead, we recommend keeping the bacon separate and adding it in right before serving - this ensures the bacon stays nice and crisp!)
