Ingredients

1 package Hempler's Original Center Cut Bacon, chopped
2 pounds baby red potatoes, halved or quartered if large
1 small red onion, finely diced
⅓ cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon granulated sugar
1 teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
2 green onions, thinly sliced

Instructions

Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 12–15 minutes, or until fork tender. Drain and set aside.

While the potatoes cook, add the chopped bacon to a large skillet over medium heat. Cook until crispy, about 8–10 minutes.

Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Reserve about 3 tablespoons of bacon drippings in the skillet.

Add the diced onion to the skillet and cook for 3–4 minutes, until softened. Stir in the apple cider vinegar, Dijon mustard, sugar, salt, and pepper. Bring to a gentle simmer and cook for 1 minute, stirring to combine.

Add the warm potatoes to a large serving bowl. Pour the warm dressing over the potatoes and gently toss until evenly coated. Stir in most of the bacon, parsley, and green onions, reserving a little bacon and parsley for garnish.

Transfer to a serving dish and top with the remaining bacon and parsley.
