In this classic recipe, a combination of art and science creates an intense bacon flavor that is truly second to none. First, our premium, lean European Bellies are dry-rubbed with a special blend of spices, and then naturally smoked over Cherrywood. No water is added, which allows the bacon to cure slowly in its own natural juices. We then center-cut it into thick slices, so they cook up with a meaty bite and a rich, savory bacon flavor.
